Pistachio Blueberry Bars
If you love a dessert that looks bakery-beautiful yet comes together with simple pantry ingredients, these Pistachio Blueberry Bars are going to steal your heart. 💚🫐 Buttery, tender, and layered with flavor, they pair a soft shortbread-style base with creamy pistachio richness and a sweet-tart blueberry filling—all topped with a golden crumble.
Recipe
2 cups of all-purpose flour
¾ cup sugar
½ tsp salt
1 tsp baking powder
¾ cup canola oil
1 egg
1 tsp vanilla
Filling
1 cup pistachio paste
1 can blueberry pie filling
Directions:
Preheat oven to 350°F.
Line a 9x9 pan with parchment.
Make the dough:
Mix flour, sugar, salt, and baking powder.
Add oil, egg, and vanilla. Mix until crumbly but holds together when pressed.
Press the base:
Press about 2/3 of the dough firmly into the bottom of the pan.
Add pistachio layer:
Warm the pistachio paste slightly (10–15 seconds in the microwave), so it spreads more easily.
Spread a thin, even layer over the base.
Add blueberry filling:
Spoon the blueberry filling evenly over the pistachio layer.
Top with crumble:
Sprinkle the remaining dough crumbs over the top.
Bake 35–40 minutes until golden on top.
Cool completely before cutting (important so it sets).
