Sweet Potato Pie Filling

Ingredients:

  • 1 ½ pounds baked sweet potatoes (about 3 large)

  • ⅓ cup melted butter

  • ¼ cup sugar

  • ½ cup brown sugar

  • ¼ cup honey

  • 2 large eggs, at room temperature, slightly beaten

  • ¾ cup evaporated milk

  • 1 teaspoon vanilla extract

  • ½ teaspoon grated orange zest

  • ¼ teaspoon mace

  • ½ teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg

  • ¼ teaspoon salt

Directions:

  1. Mash the baked sweet potatoes using an immersion blender or stand mixer until smooth.

  2. In a large bowl, combine the mashed sweet potatoes with all other ingredients. Mix until well incorporated.

  3. Pour the filling into your prepared pie crust.

  4. Bake until the internal temperature reaches 175°F (about 30–40 minutes, depending on oven and crust type).

  5. Let cool slightly before serving.

Sweet Dough Pie Crust

Ingredients:

  • ¾ cup shortening or butter

  • 1 ¼ to 1 ½ cups sugar (adjust based on sweetness preference)

  • ¼ cup whole milk

  • 2 eggs, lightly beaten

  • 2 teaspoons vanilla extract

  • 3 teaspoons baking powder

  • 3 cups all-purpose flour (use 2 cups in dough mixture)

  • Optional: ½ teaspoon cinnamon and/or ¼ teaspoon nutmeg (add to flour if desired)

Directions:

  1. Preheat oven to 325°F.

  2. In a large mixing bowl, beat shortening or butter, sugar, milk, eggs, and vanilla together until well combined.

  3. Whisk baking powder into 2 cups of flour (plus any optional spices), then gradually add to the wet mixture. Mix gently—do not overmix.

  4. Work the dough by hand; it will be soft and thick.

  5. Prepare two 9-inch pie pans by spraying with baking spray or greasing with shortening and lightly flouring the bottoms.

  6. Roll the dough on a heavily floured board to ¼–½ inch thick, or press it directly into the pie pans to form the crusts. Do not dock the dough.

  7. Add your sweet potato filling (or any favorite filling). If there’s extra dough, create a top crust, lattice, or cut-out designs.

  8. Bake pies for about 30 minutes, checking at 20 minutes as ovens may vary. Pie is done when the crust is golden brown and a test pick comes out clean.
